Indian Cooking for Beginners EPISODE 2: Spicy Potato Curry & Chicken Pakoras
In this second episode of the Indian Cooking for Beginners, learn how to make Aloor Dum (spicy potato curry in a rich tomato flavoured sauce with garam masala and coriander leaves) as well as the BEST chicken pakoras made with large chunks of chicken marinated in ginger, garlic, and exotic spices. INGREDIENTS FOR ALOOR DUM:
8 baby potatoes, par boiled with skins taken off
1 large onion grated or chopped coarsely in a blender
2 Tbs. grated ginger
2 Tbs. ketchup
1 tsp. cayenne
1 tsp. turmeric
whole garam masala (1 large cinnamon stick broken, 4-5 cardamom pods broken, 3-5 cloves,1 large or 2 - 3 medium sized bay leaves)
Tip 1: as noted in the video, parboiling the potatoes makes this dish easier to make. For added flavour, you can fry them lightly in the flavoured oil, but can omit this step if this is too difficult given the potatoes need to be handled very gently as they are parboiled so they don't break.
Tip 2: it is important to use grated or coarsely chopped onions with their juice for the texture you want in this recipe. Sliced or diced onions will not work as well.
Tip 3: you can substitute tomato sauce for the ketchup but will need to add sugar
Tip 4: whole garam masala adds a different level of flavour compared to garam masala powder

2 boneless chicken breasts cut up into large bite sized chunks
1/2 to 1 cup cut up coriander leaves
2 Tbs. Shan brand meat masala
1 Tb. cumin seeds
1 Tb. ground coriander
2 Tbs. ginger-garlic paste
1 Tbs. chili sauce
1/4 cup lemon juice
1/4 cup vegetable oil
3 to 4 Tbs. rice flour
3 to 4 Tbs. corn flour
sufficient vegetable oil for frying
