Chicken Tikka Masala
Chicken Tikka Masala is made using boneless chicken pieces marinated then roasted and cooked in gravy
METHOD
1. Boneless chicken - 1/2 kilo cut in to cubes
To marinate it we need
Ginger garlic paste - 1tablespoon
Kashmiri red chili powder - 1 teaspoon
Garam masala - 1 teaspoon
Turmeric powder - 1/2 teaspoon
Lemon juice - 1 tablespoon
Salt - 1 teaspoon
Black pepper powder - 1/2 teaspoon
Coriander powder - 1 teaspoon
Roasted and dried fenugreek leaves - 1 teaspoon
Tandoori orange food colour - 3 pinches it is optional
Yogurt - 3 tablespoon
Oil - 1 teaspoon
Mix it and marinate for 2 hours
2.In a pan add butter and roast these marinated chicken pieces for 5 to 8 minutes and this is called chicken tikka
3.For chicken tikka masala we need
Heat butter - 50 gram
To it add Cloves - 3
Cardamom - 2
Cinnamon small sticks - 5
Saute for 10 seconds
4.Add onion paste of two medium sized onions saute till colur changes
5. Add ginger garlic paste - 1 tablespoon and saute till raw smell disappears
6.Lower flame and add
Kashmiri red chili powder - 1 tablespoon
Turmeric powder - 1/2 teaspoon
Garam masala powder - 1 teaspoon
Cumin powder - 1/2 teaspoon
Coriander powder - 1 teaspoon
Saute by adding little water
7.Now add tomato paste of - 3 medium sized tomatoes and saute till raw smell disappears
8.Add remaining chicken tikka masala
9.Add milk and cashew paste - 20 and mix well
10.Add water - 1/2 cup
Then add few coriander leaves and salt
11.Add tomato ketchup - 1 tablespoon
12.Cook for 5 to 10 minutes on low flame
13.Add chicken tikka pieces and mix well cook for a minute on high flame
14.Add water - 1/2 cup
add Fenugreek leaves and fresh cream - 1 tablespoon and green chillies diced - 2
15.Cook under low flame for 10 minutes
16.Chicken tikka masala is ready serve hot with roti or parota
