Creamy Queso Chicken Enchiladas 🌮🧀
Tender shredded chicken wrapped in soft flour tortillas, then covered with creamy queso blanco and melted cheddar for a rich, flavorful Tex-Mex dinner. This easy family favorite comes together with simple ingredients and is perfect for busy weeknights.
Ingredients
5 burrito-size flour tortillas
2½ cups cooked shredded chicken
½ packet taco seasoning
1 cup sour cream
1 cup shredded cheddar cheese
2 tablespoons chopped green chilies
1 (10-ounce) can diced tomatoes with green chilies, undrained
1 pound Queso Blanco Velveeta, cubed
Instructions
Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
In a large bowl, combine the shredded chicken, taco seasoning, sour cream, cheddar cheese, and chopped green chilies. Mix until everything is evenly incorporated.
In a medium saucepan over medium heat, combine the cubed queso blanco and the undrained diced tomatoes with green chilies. Stir frequently until the cheese is fully melted and the sauce is smooth.
Lay the tortillas on a clean work surface. Spoon about ½ to ¾ cup of the chicken mixture into the center of each tortilla, then roll each one tightly.
Arrange the filled tortillas seam-side down in the prepared baking dish.
Pour the warm queso sauce evenly over the enchiladas, making sure they are well covered.
Bake for 20–25 minutes, or until the filling is hot and the sauce is bubbling.
Serve warm with your favorite toppings, if desired.
