SABUDANA PARATHA & CORIANDER CHUTNEY (Navratri Fasting Recipe)

Roasted and ground sabudana combined with a medley of spices transform ordinary fasting into a flavor extravaganza! These parathas are soft, savory, and perfect for breaking your fast or enjoying any day of the week. And don’t forget to churn some fresh coriander chutney for an extra zing! 🌿

Method :
- In a pan, dry roast 1 cup Sabudana on slow heat
- Let it cool down then churn in mixie to a fine powder (Take out some of flour to use later).
- Add 1.5 cup boiled & grated Potatoes, 2-3 finely chopped Green Chillies, 1 finely chopped small Ginger Knob, 1 tsp Cumin Seeds, Rock Salt (Sendha Namak)& finely chopped Coriander.
- Mix everything well, knead a dough and leave it for 10 min.
- In a mixer jar, take 1 tbs raw Peanuts, 1 tsp Cumin Seeds, 2-3 Green Chillies, a small Ginger Knob, Rock Salt, fresh Coriander, 1 Lemon Juice and few Ice Cubes to churn it to a fine chutney.
- Transfer the chutney in a bowl and keep aside.
- Sprinkle little water in the dough and knead it to make it soft.
- Roll out few balls from the dough prepared, Dip it into dry flour & Gently roll it with the help of rolling pin
- Place it on the hot pan, cook it on medium heat; apply ghee on both sides.
- Once it’s golden-brown, take it on a serving plate
- Enjoy Delicious Vrat ka Sabudana Paratha with Chutney
