Pumpkin Spiced Muffins!
It doesn’t get much better than these Healthy Muffins!

They take just few minutes to make and are perfect for anytime in a day.
I always find that pumpkin and cinnamon combination works very well. The day, I baked, my kitchen was smelling divine!
It’s light, fluffy, moist, flavorful and like the most versatile muffin recipe I have ever made! .

Simple and pure, with pumpkin and cinnamon flavor inside.
They are fantastic eaten slightly warm alongside a hot cup of tea, coffee or milk. And I love eating with my tea.
They are healthier than most, since they are made with whole wheat flour and sweetened with brown sugar and added oil instead of butter.
Super easy and super scrumptious!! .

Ingredients:
2 eggs
3/4 cup brown sugar
1/2 cup oil
3/4 cup pumpkin puree
1.5 cup whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tbsp cinnamon powder
1/2 cup water
few chopped walnuts

Instructions:
Preheat the oven to 180°C and and line a muffin tray with muffin liners and keep aside.
In a bowl, add eggs and whisk them with hand blener till frothy.
Add sugar and oil and again blend it.
Add pumpkin puree and whisk it again till it's well blended.
Now add whole wheat flour, salt, baking powder, baking soda and cinnamon powder and mix well until well combined.
Add 1/2 cup water, if the batter is too thick.
Scoop the batter in a lined muffin tray and add few chopped walnuts on top of each muffin.
Bake at 180°C for 15-18 minutes or until a toothpick inserted into the center comes out clean.
