El Torero Mexican Resteraunt Copycat Salsa Recipe!

For the Atlanta area this restaurant's salsa is legend. I can't get enough of it so I came up with this copycat version of their amazing salsa and I think it is very close to what they serve in the restaurant.

Ingredients:

1 28oz Hunts canned no salt added crushed tomatoes
1-1/2 cups water
1 to 2 Tbsp loosely packed chopped Cilantro (optional, they don't use it)
1/4 cup medium chopped onion
1/4 cup pickled jalapeno brine
2 pickled jalapenos drained of juice and chopped
2 cloves of garlic
1 tbsp salt (if you used regular salt Hunts tomatoes then only use 1 Tsp of salt)
Juice of 1/2 fresh lime

Directions:

In a blender pour the crushed tomatoes and the 1-1/2 cups of water, blend to combine. Add the remaining ingredients and pulse to chop and combine them but not too much so it has some texture and not a smooth puree. Simmer in a non reactive pot for 5 minutes to combine the flavors. Refrigerate until thoroughly cooled.

I don't think EL Torero uses cilantro but I like it so I added it. If you like less heat try only 1 jalapeno and maybe half of the brine.
