KETO OMELETTE

Omelette:
1 tbsp butter
3 eggs
Salt and pepper
1/3 cup grated cheese of your choice

Beef Filling :
1 tbsp olive oil
Sliced quick cook beef
1 ½ cups of sliced mushrooms
Minced garlic
Green onion
Half a Shallot
½ cup of black olives
2 jalapeno chillies
Fresh chives
Garlic/Onion/Paprika/Steakhouse seasoning

Heat oil in a pan. Add beef and cook for about 2 minutes. Add the rest of the vegetables and cook for about 2-3 minutes. Remove from pan.

Whisk eggs, salt and pepper.
Lower heat to medium.
Add oil and butter, then when it foams, add egg.
Immediately give it a few stirs, then when the base just starts to set, spread it all out to cover the base.
Wait 20 – 30 seconds, then use a rubber spatula to lift up the edge, tilt pan to make the egg run off the surface under the omelette. Repeat 2 or 3 times around the edges of the omelette.
Cover half the omelette with the cooked beef filling, top with cheese of choice.
Fold omelette in half to cover beef. Transfer to serving plate – residual heat will melt cheese.
