Thomas Mahon farms with his son Éanna outside the scenic village of Kinvara in County Galway on the west coast of Ireland. The Irish climate is ideal for naturally growing fresh grass, with the whole country regularly swept with fresh Atlantic rain that naturally irrigates the land: "It's a beautiful place to live and we're very, very fortunate... we may get wind and storm but they pass away too and the calm follows."
