These are as easy to make as they are to eat! No baking required. These bars have a creamy chocolate and peanut butter center surrounded by crunchy sweet oats. The few ingredients you need are:
3/4 C butter
1/3 C packed brown sugar
1/3 C peanut butter
2 1/3 C quick cooking oats
3/4 C semi sweet chocolate chips
1 tsp vanilla

Hi, Kristy in the Rada Kitchen. I just mixed up a batch of these no bake chocolate oatmeal bars. They are so good I wanted to share the recipe with you. The middle is a creamy chocolate and peanut butter filling with a crunchy oatmeal topping. So they are no bake so we'll just go to the stove and mix them up.

You will need two pans: you will need a large sauce pan and a medium one. In the large sauce pan we are going to melt ¾ cup of butter. Now that the butter melted we are going to add a 1/3 cup of packed brown sugar. And you'll just want to stir that around to get the sugar all blended into the butter. Now we're going to add 2 1/3 cups of quick cooking oats. You just want to get that all well coated with the butter and the sugar.

So now we're just going to let that sit there and cook for a few minutes, it's not really going to cook, its just going to be warm. It's going to give time for the butter to soak into that oatmeal. So we just want to cook this on low heat, give the butter time to soak into the oatmeal.

In the meanwhile, in a smaller saucepan on low heat we're going to add a 1/3 cup of peanut butter. I did use the creamy kind and then ¾ cup of semi sweet chocolate chips. And that you really want to watch because you want to stir it so it doesn't burn and you want all the chocolate chips melted together with the peanut butter.

So here I have a 8 by 8 square baker. I am using the Rada Stoneware so I don't have to season it. You might want to grease a pan if it is not stoneware. So you are going to take half these oats and put those on the bottom. Now here, I found this Rada Ice Cream Scoop works well because you want to press those pretty good so when you cut the bars later they don't crumble apart. I found this Rada Ice Cream Scoop works really good. Its not going to bend, it's really strong. So you really want to press that oatmeal into the bottom of that pan, this would work good if you had to make a graham cracker crust. You can really push those down and make a really good bottom that stays together.

Now on top of this we are going to pour our chocolate peanut butter mixture. Just spread it out to all the corners. Now you sprinkle on the remaining oatmeal. You don't want to push this too hard. We are going to press it a little bit just so it stabilizes it on to the top of the chocolate. So just gently because I like to have the yummy chocolate and peanut butter center. If you push the oats in too far, you won't get that distinct center.

And you know what? They are done. Well you can't eat them yet, you have to put them in a refrigerator. I like to put it in overnight. Probably at least 3 hours just to get that chocolate all settled. And then when you are ready to cut them you want to get them out maybe a half hour before you cut them just to soften that chocolate up from being in the refrigerator. Enjoy, they're delicious. I guarantee they will be a big hit wherever you take them.
