I get asked all the time if I could pick just one of my dishes that would tell the story of my life this would be it!

Smoked Mushroom & Jackfruit BBQ Pasta with a Palisade Peach Pit Bean Crostini

From growing up in Kansas City eating BBQ, becoming a world class pitmaster, becoming a professional Chef, going on a 150 pound weight loss journey, reversing 6 life threatening diseases, moving away from Kansas City to Colorado, all the way up to today helping hundreds of thousands of people in their own weight loss, health and culinary journey...this dish definitely defines me and is a one-of-a-kind.

Before going 100% plant based 3 years ago I used to make this dish with High Fructose infused BBQ sauce, Pulled Pork, bacon, heavy Cream, cheddar Cheese, Butter and it has won me a lot of cooking competitions over the years.

Fast Forward to today, now I make it 100% plant based with the healthiest BBQ sauce on the planet, coconut cream, 3 kinds of mushrooms, jackfruit and several different seasonings to bring that cheesy alfredo like taste to this dish!

And to add that messy BBQ experience to the dish I decided to create a Crostini made of Colorado Palisade Peaches, smoked pit beans, slaw and Fool's Gold seasonal Palisade Peach BBQ Sauce.

The point being that you can make great food and still make it healthy without giving up anything that you love!!
