WHY is Sukhothai so famous for its noodles?

Traveling around the country of Thailand by road, looking out the big bus window you are bound to learn the names of a few THAI FOODS synonymous with the places of the recipes' origin. Red sign with yellow lettering "Grilled chicken from Wichian Buri?" Tiny tin roof restaurant with a huge sign serving Laap from Yasoton? What about Korat's Fried Noodles? or Curry Rice from Nakon Sri? Of the many hundreds of recipes here in Thailand, there are a few provinces (or districts) KNOWN by their home recipe. Sukhothai is definitely high on the list, famous country-wide for its noodles.

"Kuay Teow Sukhothai" is why were here, and allow me to share with you these 6 excellent lunch orders. Noodles, meat, eggs, and amazing broth, this dish has it all, and Li and I are going crazy for some noodles here today.
