BEST german zwiebelkuchen - onion "cake"

dough:
250g flour (about 2 slightly mounded cups)
1 package quick acting yeast
200ml tepid water (scant 2 cups)
50g melted cooled butter (about 1/4 cup: in the video I say 1/3 but after remeasuring it is closer to 1/4 cup)
teaspoon salt
teaspoon sugar

topping:
1.5 kilo sliced onions (about 3.5 lbs)
150g bacon ( or "speck" if you can find it...or pancetta, ham, etc)
generous pinch thyme
S & P
- cook as per video, let cool and drain, then add:
150g sour cream mixed with 2 eggs

taste and adjust S & P if needed

500 g seeded and sliced tomatos (3 medium size tomatos)
grated cheese (gouda, medium cheddar, fontina, etc...)

bake at 390 for approximately 35-40 minutes
