蜜汁猪肉干 Pork Jerky Bak Kwa 零失败超简单的肉干做法，腌制和烘烤，两个步骤完成，原来就是怎么容易Easy 2 step pork jerky

蜜汁猪肉干
～肉碎- 1kg
～蜜糖- 100g
～糖- 200g
～酱油- 2 tablespoon
～黑酱油- 1 teaspoon
～绍兴酒- 2 tablespoon
～魚露- 2 tablespoon
～五香粉- 1 teaspoon
～胡椒粉- 1 teaspoon

擦的蜜糖水
蜜糖- 2 tablespoon
水- 1 tablespoon

1）将猪肉剁成肉碎，猪肉的部分必须有肥瘦适中，瘦肉太多也不好吃，会太硬，
你们可以用处理器处理，不过猪肉不要太碎，我已经试过了，太碎口感不好
2）调配制料，+蜜糖+蚝油+糖+酱油+黑酱油+绍兴酒+五香粉+胡椒粉，搅拌均匀
3）倒入肉碎中，用手搅拌均匀
4）在加入糖，搅拌均匀
5）用刮刀用顺时钟方向搅拌至肉起胶
6）用保鲜膜包好放入冰箱冷藏隔月
7）肉碎称280g一份
8）预热烤箱180度20分钟
9）准备搽在肉干上面的蜜糖水，2 ：1 的比例，搅拌均匀，备用
10）准备烘焙纸和A4透明胶片纸,将肉碎放在烘焙纸上，用手将肉碎压平，然后将A4胶片放在肉碎上面，用刮板把肉碎均匀的刮平，一张张A4的肉干，用 280g的肉碎厚度刚刚好，轻轻把胶片拉起
11）轻轻的放入烤盘中，搽蜜糖水，薄薄的一层就好差太多会烧焦
12）放入烤箱180度20分钟
13）时间到，端出，切成喜欢的大小，翻另一面，搽上蜜糖水
14）准备烘烤第二次，第二次的烘烤是烤肉干的色泽，也可以用自己喜欢的颜色而定，烤盘上放上烤架，将搽好的蜜糖水放在上面
15）再放入烤箱200度15分钟
16）建议别全部烤太焦，可以收藏冷藏，你要吃的时候再烘烤，收藏时可以用塑胶纸包好放入可冷藏的容器中，即可

~ Minced meat-1kg
~ Honey-100g
~ Sugar-200g
~ Soy sauce-2 tablespoons
~ Dark soy sauce-1 teaspoon
~ Shaoxing wine-2 tablespoons
~ Thai fish sauce-2 tablespoons
~ Five spice powder-1 teaspoon
~ Pepper-1 teaspoon

Water-1 tablespoon

1) Chop the pork into minced meat. The pork must be fat and lean meat, too much lean meat is not delicious, you can use a food processor, but do not over minced the meat, it doesn’t taste too good
2) Lemonade sauce, + honey + oyster sauce + sugar + soy sauce + dark soy sauce + Shaoxing wine + five spice powder + pepper, stir well
3) Pour into the minced meat and stir evenly by hand
4) Add sugar, stir well
5) Stir clockwise with a spatula until the meat is sticken
6) Wrap with plastic wrap and put it in the refrigerator overnight
7) Minced meat weighs a portion of 280g
8) Preheat the oven 180 degrees for 20 minutes
9) Prepare the honey water, to rub on the jerky, the ratio of 2:1, stir evenly
10) Prepare parchment paper and A4 transparent sheet, put the minced meat on the parchment paper, press the minced meat with your hands, then place the A4 sheet on top of the minced meat, and use a scraper to scrape evenly the minced meat,once A4 size jerky, 280g minced meat the thickness just nice, gently pull up the sheet
11) Gently put on the baking tray, apply honey water, just apply a thin layer, too much will burn
12) Oven at 180degrees for 20 minutes
13) When the time is up, take it out, cut into the size you like, turn the other side, and apply honey water
14) Prepare to bake the second time, actually second bake is color Of the jerky, depend color you like,put the baking tray on the baking pan
15) Add to the oven at 200 degrees for 15 minutes
16) Recommended do not bake all too burnt, you can keep them in fridge, and rebake them when you need, you can wrap them in plastic paper and put them in a container
