BAJAN SALT BREAD IS A STAPLE IN EVERY BAJAN HOUSEHOLD THEY ARE USED FOR HAM AND CHEESE CUTTERS AND FISH CAKES AKA (FISH AND 2). THEY ARE SIMILAR TO HOPS AND COCOA BREAD. EACH ISLAND MAKE IT A LITTLE DIFFERENTLY BUT VERY SIMILAR.

INGREDIENTS
3 1/4 CUPS OF BREAD FLOUR OR AP FLOUR (SIFTED)
1 1/2 TSPNS BROWN SUGAR
1 TSPN SALT
1 1/2 TBSPNS VEGETABLE OIL
3 TSPNS ACTIVE DRY YEAST
1 3/4 CUPS WARM WATER
DIRECTIONS:
PUT THE WARM WATER IN A MEASURING CUP, ADD THE SUGAR, YEAST AND STIR.
SET ASIDE TO PROOF.
SIEVE FLOUR AND SALT IN LARGE BOWL AND MIX TO WELL COMBINE.
USING YOUR ELECTRIC STAND MIXER WITH THE PADDLE HOOK.
ADD THE YEAST PROOF MIX.
ADD THE OIL.
ADD THE FLOUR AND LET THE MIXER DO ALL THE WORK FOR YOU, KNEAD FOR 5-6 MINUTES AND THE DOUGH IS ELASTIC LIKE AND STICKY.
PUT A LITTLE OLIVE OIL IN THE PALM OF YOUR HANDS, REMOVE THE DOUGH FROM THE MIXING BOWL AND FORM THE DOUGH INTO A BALL.
POUR A LITTLE MORE OLIVE OIL INTO THE MIXING BOWL MAKING SURE ALL SIDES AND BOTTOM IS COVERED.
PUT THE DOUGH BACK IN TO THE MIXING BOWL.
COVER WITH PLASTIC WRAP AND PLACE IN A WARM AREA FOR 45-60 MINUTES AND DOUBLED IN SIZE.
USING YOUR FIST PUNCH THE DOUGH DOWN .
TURN OUT ONTO A LIGHTLY FLOURED SURFACE.
FORM INTO A LOG SHAPE, CUT IN HALF THEN CUT EACH HALF INTO 5 EQUAL PIECES.
FORM EACH PIECE INTO A BALL.
PLACE THE DOUGH BALLS ONTO A LINED TRAY WITH PARCHMENT PAPER.
USING A SHARP KNIFE SCORE DOWN THE CENTER OF EACH ROLL.
COVER THE DOUGH BALLS WITH A TEA TOWEL AND LET SIT FOR 30 MINUTES TO PROOF.
PREHEAT OVEN TO 400ºF
PLACE IN THE CENTRE OF THE OVEN AND BAKE FOR 25-30 MINUTES AND THE ROLLS ARE LIGHTLY BROWN AND HOLLOW TO THE TOUCH.
