🥯 Homemade Bagels 🥯
1 1/2 cups water
1 tablespoon sugar
1 1/2 tablespoons yeast
5 cups flour
1 1/2 teaspoon salt
2 tablespoons baking soda
2 tablespoons brown sugar
1. In a stand mixer, combine water, sugar, yeast, and a couple cups of flour. Add the salt on top. Finish by slowly adding the remaining flour. It will be very stiff and you made need to let it rest for a few minutes before adding the rest. Knead for several minutes then allow to rise until doubled.
2. Once doubled, punch down the dough and give it a little bit of kneading to smooth it back out.
3. Divide the dough into 8 equal pieces by dividing into 4 small squares and then each square into two triangles. To shape into bagels, do not knead or handle too much. Take each point of the triangle and tuck it under, rounding out the top. Use friction from the counter to “swirl” into a ball. Poke your finger through the center to form a hole then roll the bagel in a circle over two fingers to widen the center. Place on a parchment lined baking sheet.
4. Allow to rise in a warm spot until puffy and begin boiling a pot of water with the baking soda and brown sugar.
5.Once boiling, preheat the oven to 425 degrees Fahrenheit and add each bagel to the pot and let it boil for 1 minute on each side. Return the bagel to the parchment lined baking sheet. Add any toppings (we prefer plain with flavored cream cheese) and bake for about 25 minutes.
