Book & Breakfast with Bri Ep.7 | Avocado Toast with a Twist, 5 Star Reads, and September Hopefuls!

Happy Sunday lovies!!! Today we’re back with another episode of Book & Breakfast. We’ve got good food, quite a few five star reads to gush over, and an overly ambitious TBR. I hope you guys enjoy and I’ll see you in the next one!

Avocado Egg in the Hole
2 slices of bread (choose what you love)
2 eggs
4 tablespoons butter
1 avocado
1 handful grape tomatoes
2 tsps sugar
Everything But The Bagel Seasoning
Trader Joe’s Balsamic Glaze

Heat skillet and melt butter into pan. Using a shot glass cut a hole into each bread slice and add to pan with melted butter (reserve circles to toast later) and toast for 2 minutes. Add egg to each peace of toast and allow to cook 1-2 minutes. Once the bottom is set, flip and cook until golden brown. Plate and set aside. Add remaining butter to pan with the tomatoes and allow to cook. Add sugar and continue to caramelize for another 2 to three minutes, set aside to cool. Top toast with mashed avocado. Season with Everything But The Bagel and top with candied tomatoes. Finish with balsamic glaze and enjoy.
