Sauces To Die For: Red Wine Shallot Sauce
This is a great sauce for grilled secondary cuts of beef, like onglet (hanger steak), flank, or skirt. To make demiglace, see the Demiglace video in my Sauces to Die For series.
About 9 oz. shallots, thinly sliced
1.5 cups red wine
1.5 cups chicken stock
2 rosemary sprigs
2 Tb. garlic, minced
5 Tb. balsamic vinegar
½ cup demiglace (optional)
Kosher salt
Peppermill
Olive oil
2 Tb. butter
