I always dismissed her reactions as dramatic, believing she just needed to 'build up a tolerance.'

For my housewarming party, I curated an elaborate cheese board, including an aged goat's milk cheddar I thought was robust but approachable. Despite Doris's clear hesitation, I insisted she try it, assuring her it was 'not that bad.' Her subsequent, truly visceral reaction – gagging, tearing up, and needing fresh air – made me realize the intensity of her sensitivities was absolutely genuine, not an exaggeration. I felt like a complete jerk.
