FALL MINI PUMPKIN PASTA (WHAT I DID)
-------------------------------------------------------------------
INGREDIENTS:
- 16 oz. Pasta Noodles (*You can use any type of pasta.)
- 1 Jar Pumpkin Pasta Sauce (*Or substitute with sauce of your choice)
- Olive Oil
- Sea Salt
- Ground Black Pepper
- Garlic Powder
- Italian Seasoning
- Ground Nutmeg
- 1 Bunch Asparagus
- 1 Lemon
- Arugula and Baby Spinach Mix
- 1 Can Organic Great Northern Beans
- Chicken Sausage (***If Non-Vegetarian)
- Half of a Whole Grain Baguette
- Basil Pesto
- Smart Balance Spreadable Butter

SALAD:
- 2 Hearts of Romaine Lettuce
- 1 Bunch of Green Onions
- Cherry or Grape Tomatoes
- Shredded Parmesan Cheese
- Dressing of Your Choice (I used a vegan caesar.)

DIRECTIONS:
1) Fill a large pot with water and put on high heat. Drizzle in a little bit of olive oil and sea salt. Bring water to a boil.
2) Preheat oven to 425 degrees.
3) Once water is boiling, dump in pasta noodles and boil 6-8 minutes, or until al dente.
4) Wash and cut up asparagus into about 1" pieces. Place on a cookie sheet lined with tin foil. Quarter 1 lemon.
5) Drizzle asparagus with olive oil, sea salt, ground black pepper, and lemon juice. Roast in oven for 20-25 minutes. *** Don't drop the pan! :)
6) Heat up the chicken sausage according to package directions.
7) Rinse and drain great northern beans and set aside.
8) Drain the pasta and add about 1 cup of the beans to the pasta. Stir gently.
9) Pour pumpkin sauce into a small saucepan and put on medium heat. Add all spices (and any that you choose). Add in about a cup of arugula/baby spinach. Stir. Turn heat down to low once greens are wilted.
10) Place chicken sausage on a paper towel/plate to catch any grease. Slice sausage into bite-size pieces.
11) Slice the baguette almost all the way through. Mix together butter and pesto and spread mixture in between the slices of bread. Place in oven at 400 degrees for about 5 minutes.
12) Mix asparagus pieces in with the pasta.
13) Put all salad ingredients together in a large bowl and toss.
