Coconut Bonbons

The coatings on the bonbons were with crushed toasted
almonds and lots of white and milk chocolate.

Here are the ingredients I used to make these:

Inside filling:
3 cups organic coconut flour
1 cup confectioner's sugar
7 ounce bag of Angel Flake Coconut
(Option on the coconut would be to use
Birds Eye Frozen grated coconut, 6 ounce pack)
1 teaspoon coconut extract
1 1/2 cups whipping cream
1/2 teaspoon salt

Coatings:

2 GHIRARDELLI white chocolate bars
1 GHIRARDELLI milk chocolate bar
5 Hershey's milk chocolate bars
I added 1/2 teaspoon of vegetable oil to each batch
and melted in the microwave in 30 second intervals, total
less than a minute per batch of coatings.
Sliced almonds toasted and crushed slightly.
