Pork Belly Hamonado Recipe

INGREDIENTS:
1 kilo pork belly slices (2 slabs)
5 cloves garlic (chopped)
1 large onion (chopped)
1 ½ cup pineapple juice (unsweetened)
⅓ cup soy sauce
Salt and pepper to taste
2 to 3 cups water (adjust as needed)
1 can pineapple slices (or chunks)
2 tablespoons sugar (to taste)
2 teaspoons oil (for sauteing)

Steps:

Make shallow criss-cross slits on the pork belly skin. Season with salt and pepper. Rub these all around before searing these in a pan, skin down. Flip and sear till all the sides look golden. Set aside.
In the same pan, add oil and saute garlic and onions. Add back the pork slabs, then pour in pineapple juice and soy sauce. Simmer for 15 minutes at medium heat.
Flip the pork to cook evenly. Add sugar to taste, with some water. Cook till tender, add more water as needed to avoid the bottom from burning.
Simmer for 45 – 60 minutes, flip occasionally until pork is tender. Baste the pork with the sauce, then add in pineapple slices or chunks. Simmer until the sauce has reduced.
Baste occasionally before serving.
