For centuries, Ukrainian cuisine has been more than just food—it’s been a symbol of identity, resistance, and survival. But under the Soviet Union, much of it was erased, suppressed, or absorbed into “Soviet cuisine” to strip Ukraine of its unique culinary heritage. Now, in the face of war, Ukrainians are reclaiming their history—through language, culture, and, yes, food.

In this video, I team up with Yevhen Klopotenko, Ukraine’s most famous chef, to uncover the dishes that survived in the shadows.
