Coconut Curry with Chick Peas and Spinach | Mumtaz Hasham
You can serve this dish with Naan or Paratha, but we enjoyed it with rice, some salad and pickle on the side. Full of flavours.
INGREDIENTS:
280 gm boiled chickpeas or from a can (1 & 1/2 cups)
100 gm baby spinach (3 cups)
2 Tbsp coconut oil
1/2 cup diced onions
1 tsp ginger/garlic paste
1/2 tsp turmeric powder
1 tsp Coriander/Jeera powder
1 tsp salt
1 tsp Kashmiri red chili powder
2 tomatoes freshly crushed
1 cup coconut milk
handful chopped coriander
1 green chili slit
1 tsp dried fenugreek leaves280 gm boiled chickpeas or from can (1 & 1/2 cups)
Adjust spices and salt to your taste.
