Tacos Dorados de Papa - Crispy Fried Potato, Onion, and Cheese Tacos

Crispy fried Mexican tacos filled with potato, caramelized onions, and queso fresco. I serve them with fresh lettuce, homemade quick pickled onions, and pop them on a bed of my simple mild tomato salsa. This recipe is vegetarian friendly but will definitely satisfy any hungry carnivore. try this super economical recipe this week 😃.
