Insects: food of the past and food of the future | Lars-Henrik Lau Heckmann | TEDxLakeComo

In these climate-challenged times, we should optimize our resources, especially in the food production chain. In his talk, Lars-Henrik Lau Heckmann wonders why Western countries do not exploit the potential of insects. In addition to eating them, insects can also be used to produce animal feed. It is a circular economy: Insects that feed on organic waste become food for pets and fishes. And in the near future, food for human beings. Today, eating insects might seem a culture shock. However, the environmental and economic benefits deriving from this choice could make us change our mind.

Lars-Henrik holds a Ph.D. in Biology from the University of Reading and has worked both in the academic and in the biotech industry. Today he is considered one of the world's leading experts in the insect industry. Since 2014 he is the main promoter of a business innovation program at the Danish Technological Institute (DTI) focused on the development of food products based on insects. His program includes numerous research projects that focus on both insect production and its use for animal and human nutrition.
