MINDBLOWING Filipino Christmas Food - Foreigners cooking UBE HALAYA

Ube is a trending food worldwide and it actually comes from the Philippines and it is used in all sorts of variations: Ube Shakes, Ube Ice Cream and Ube pastries. As foreigners living in the Philippines we are adapting to the Christmas traditions in the Philippines and we are trying to cook one staple Filipino Christmas Foods that is used for many Christmas Desserts in the Philippines. Our Filipino friend and hobby baker Mano helped us to create an Ube Halaya recipe for at home.

👨🏻‍🍳 Here is the UBE HALAYA recipe

INGREDIENTS:
- (500 grams) boiled and grated purple yam
- 300ml condensed milk / condensada (1 can)
- 2 cups coconut milk (1 large can)
- 1/4 cup butter
- 1 teaspoon ube flavoring (optional)
- Purple food coloring (optional for when your fresh ube is not purple enough).

INSTRUCTIONS:
- boil some fresh ube until tender (approx 30 mins)
- Peel and shred the ube with a grater.
- Boil the coconut milk in a large pot or wok over medium heat.
- Add the condensed milk, and mix well.
- Add the purple yam and stir the mixture continuously for 45 mins to an hour.
- At any point after adding the purple yam, add some ube flavoring if you want. Also add some food coloring if your ube isn't as purple as you want it to be.
- Add the butter after the first 30 minutes .
- Continue to stir until the mixture is thick. Stir for an ever longer period if not thick enough.
- turn off the heat and let it cool. The halaya will thicken even more as it cools.
