DIY Bone Broth FAST + EASY in just 4 HOURS!

Ingredients: 
Base
- 2 roasted chicken bodies- 6-12 chicken feet-10 chicken livers (1/3 pound)-10 chicken hearts (1/3 pound)- 2 TBLS apple cider vinegar-1 TBLS fish sauce-10-20 black peppercorns- Whole ginger (rough chop)
Second Simmer- 4 carrots- 2 small (or 1 large) onion- 2 small (or 1 large) celeriac root- 3-4 parsnips (when available)
Directions:
Place all of the ingredients for the base into the pressure cooker and fill with water up to an inch below the max fill line. On the manual setting at high pressure, set the timer for 75-120 minutes. When time is up, hit the fast release.
Rough chop all of the ingredients for the second simmer and place in a stock pot. Strain the contents of the broth into the stock pot, bring to a boil, then reduce hear and do a low simmer uncovered for at least 1 hour, more if you'd like a greater concentration of flavor.
Strain contents of the stock pot and place into 1 quart jar, preferably wide mouth. (this makes skimming the fat layer easier). Place in fridge overnight, then skim the top layer of fat as this is where many of the impurities of the broth reside. Freeze or use within 3 days.
