I show you the three meals I've been eating on rotation, because sometimes I just don't feel like cooking but still deserve something better than Special K.

Recipes:

Banana Granola 6-8 servings
2 ripe bananas
1 tbsp coconut oil
2 tbsp peanut butter
2 tbsp hot water
4 cups of rolled oats
1/2 cup of chopped nuts
1/2 cup seeds
1/4-1/2 cup of raisins
1/4 - 1/2 cup of chopped dried ginger

OPTIONAL: Add a couple of tbsp of sweetner of choice if you’re after a sweeter granola.

Mash bananas with fork and then add liquid ingredients.
Mix liquid with dried ingredients except dried fruit. Go in with your hands when you do this and mash the banana into oats.

Bake for 30-45mins in the oven making sure to check every 6-8 minutes and mixing through.

Let cool completely on rack before transferring to an air-tight container.

This might last me a week and a bit if I don’t go crazy and eat it for breakfast, lunch AND dinner. So hard though.
Tabbouleh 4-6 servings
1 cup of bulgur wheat left to soak in around 1.5 cups of boiling water
While your bulgur wheat soaks chop your ingredients of choice

I go for things I know will keep well in the fridge, olives, sundried tomatoes, onion even gherkins are great!
I then add fresh things as I go to liven up the meal, or just keep as is when I can't be bothered.

I season only with salt, pepper, lemon and some high quality olive oil and I find this is more than enough!

PASTA SAUCE
1 tbsp olive oil
2 chopped onions
5 crushed garlic cloves
1/4 cup tomato paste
3 tins of crushed tomatoes (I like using a combo of crushed tomatoes and cherry tomatoes)
1 tbsp dried basil
1/2 tbsp dried oregano
1/2 tsp crushed fennel seeds
1 tbsp chili paste (adjust to your liking and to how intense your chili paste is or you can also swap for a couple of tsps of chili powder, !)
salt and pepper to taste
1/3 cup of chopped olives
A bunch of basil

Simmer for at least 45 minutes for best flavour!
OPTIONAL: Add a sprinkle of coconut sugar or sweetener of choice to bring out flavours or if your tomatoes aren't sweet enough.
