INGREDIENTS:

3 cups flour
2 tsp yeast
3 tbsp brown sugar
1 large egg
1/4 tsp salt
2/3 cup milk
1 1/2 oz / 45 g butter

1/2 cup brown sugar (for filling)
1/2 tbsp cinnamon (for filling)
2 oz / 60 g butter, melted (for filling)

(Cream Cheese Frosting)
3/4 cup confectioners sugar
1/2 tsp milk
1/4 cup cream cheese, softened at room temperature
1 oz. / 30 g butter, softened at room temperature
2-3 drops vanilla extract

DIRECTIONS:
Preheat oven to 190C/375F. Combine milk with egg. Mix well and set aside. Put flour into a bowl. Make a well in the center. Add in yeast, brown sugar, salt, butter and egg mixture. Mix with hands until it starts to form a dough. Add flour to your work surface and knead for 5-6 minutes or until it comes together into a dough. Tuck into a ball. Put it back into the bowl. Cover and set aside in a warm place for 40 minutes. To make the filling simply combine the cinnamon with brown sugar. Set this to the side.

Flour your work surface and roll out the dough to about 5 mm / 1/4 inch in thickness. Brush on melted butter onto the rolled dough but stop about an inch (3 cm) from the edge. Sprinkle on cinnamon sugar. Roll tightly. Cut into 9 even pieces. Put into a baking pan. Cover and set aside for another 20 minutes.

Bake for 15 minutes at 190C / 375F. While it's cooling, make the frosting. Combine cream cheese, butter, milk and vanilla extract and mix until smooth. Add in confectioners' sugar and mix until nice and spreadable. Top cinnamon rolls with cream cheese frosting and enjoy!
