Homemade Nigerian Meat Pies (Melts in your mouth!)

How to make Homemade Nigerian Meat Pie (Melts in your mouth and is absolutely delicious!)

Meat Pie dough ingredients (Makes about 8-10 meat pies)

4 cups flour
1 tsp baking powder
1 tbsp sugar
250g margarine (cold)
1 pinch salt/ Bouillon cube
1egg

Directions
1. Mix flour, baking powder, salt and sugar in a bowl.
2. Add margarine (cut into cubes) and work into flour with finger tips till bread crumb consistency forms
3. Add the beaten egg and knead into a stiff ball.
4. Knead well but do not over knead if you intend to get a very crumbly (melt in your mouth) dough.
5. Wrap with cling film and place in the fridge.

Meat Pie filling ingredients

2 tbsp Vegetable oil
1 medium Onions
250g ground beef
1 medium carrot
2 small Irish Potatoes
1/2 tsp curry, thyme, black pepper, Cameroon pepper.
1 double knorr cube
Salt to taste
1/2 cup bell peppers
1 tbsp flour/ corn flour
1/2 cup water
1 egg

Directions
1. Heat up a pan, add vegetable oil, fry onions, curry and thyme till translucent
2. Add ground beef/ minced meat and cook till no more pink parts are visible, season with Bouillon cubes, black pepper and Cameroon pepper, add water and cover, cook for 10 minutes on very low heat.
3. Add carrots and potatoes, cook for another 10 minutes.
4. Check for seasoning, add bell peppers, then flour
5. Cover and cook for 2 minutes, cool before using as filling.

To make Meat pie.
1. Bring out dough from fridge freezer Cut dough into 8- 10 pieces
2. Preheat oven, spray baking sheet with non stick spray
3. Flour surface and rolling pin, Roll out eat piece of dough , use a round object to cut out a circle (pot cover, round bowl). Remove excess dough, save for later.
4. Add 2 scoops of filling in the center, fold over gently to form a semi-circle. Pinch ends with finger tips and then seal edges finally with a fork.
5. Continue the process till all the dough and filling is exhausted.
6. Create air pockets with the fork and brush meat pie with egg to make it shinny when baked.
7. Bake at 160C for 40 minutes, check on it every 20 minutes, till golden brown on the outside and crust is firm.
8. Allow to cool for 15 minutes before serving.
