This soft, braised tofu is a favorite in Korean homes and will win over even the most carnivorous eaters. It's traditionally flavored with soy sauce, gochugaru (hot pepper flakes), garlic, scallions, and sesame oil -- but this version from Mokbar's Esther Choi kicks things up with shiitake mushrooms and a surprising hit of paprika. Esther Choi's Dubu JorimPREP TIME: 35 minutes
COOK TIME: 30 minutes
SERVES: 2 to 4
INGREDIENTS:
1 14-ounce block extra-firm tofu
4 tablespoons soy sauce, divided
1/2 cup hot water
6 dried shiitake mushrooms
1 small onion, diced
2 tablespoons vegetable oil, divided
2 scallions, white and light green sections, chopped
1 red chili pepper, minced
2 cloves garlic, minced
1 teaspoon ginger, grated
2 tablespoons gochugaru
1 teaspoon paprika
1 tablespoon toasted sesame oil
1 tablespoon sugar
1 tablespoon mirin
1 tablespoon toasted sesame seeds
steamed white rice, to serve
