Angelo's Mom Makes Stuffed Bell Peppers and Tomatoes

Follow along for this. You can change the portions however you want, but here's my mom's ingredients:

-4 tomatoes
-3 green bell peppers
-2 onions
-1 zucchini
-1 medium sized eggplant
-4 or 5 chopped onions
-2 cans tomato sauce
-2 cups of rice
-Olive oil
-About 1 1/2 packages of ground beef
-Chopped parsley
-Black pepper
-Salt
-Mint

Chop four to five onions, put them in a large pan, put olive oil on it, and put on a medium to low flame to help dissolve the onions, which takes about 10-15 minutes.

Cut the tops off the tomatoes, bell peppers, and eggplant. Remove the insides of each as my mom demonstrates and put the insides in a bowl. For the bell peppers, rinse the seeds off them in the sink. Cut the zucchini in half and take out the insides with a spoon. The onion is a little different, but follow along with the video, taking the outer most layer and putting the rest along with the insides of the other vegetables. Mix the insides of the vegetables in the bowl.

Put all the vegetables in a baking pan. Chop a bunch or two of parsley.

Clean the two cups of rice (if you feel like it. I don't when I make rice) by rinsing them with water.

Crumble up the 1 1/2 packages of ground beef (you can change the portions, as with everything else) and add them to the frying onions. Stir it with the onions until it's brown.

Preheat the oven to 350 degrees and add the rice to the onions and ground beef, stirring them briefly. Then add all the insides of the vegetables to the pan and stir everything together.

Add a can of tomato sauce to the pan and the chopped parsley and stir everything. Add black pepper, mint, salt, and stir everything. Put the lid on it and let it cook for ten minutes. Turn the heat off and let it cool down for five minutes.

Everything in the pan is the stuffing for the vegetables. Use a spoon to put the stuffing inside them and put the tops on the tomatoes and bell peppers.

Pour another can of tomato sauce over the vegetables in the cooking pan. Add a little water to the pan. Pour olive oil over the vegetables, sprinkle black pepper, and put it in the oven at 350 degrees for 1 1/2 hours.

When they're done, take them out of the oven and let them cool down for 20 minutes before serving.
