Tasty Crispy Garlic Hot Chili Oil

Lets make Crispy Garlic Hot Chili Oil!!!

Ingredients.
2 Cups chili (Any type you like. Up to you and your level of hotness you prefer. You can mix and match)
2 Cups of neutral oil like vegetable or canola
1 cup Szechuan chili flakes
3 Tbsp mushroom powder
2 Tbsp Sugar
4 Teaspoon Kosher Salt
2 Teaspoon Ground Cumin
3/4 Tsp Ground Black pepper
2-3 pieces of 2 inch thin garlic
3/4 Cup of thinly sliced Garlic
2 Cups of thinly sliced shallots
Adjust ingredients to your liking.

Check the Scoville Scale for chili options

Instructions.
1. Wear your gloves!!!
2. Remove seeds from Chili
3. Grind up the chilis to small flakes
4. Combine ground up chili, Szechuan chili flakes, mushroom powder, sugar, salt, ground cumin and ground black pepper into a heat proof bowl
5. Slice garlic and shallots in thin pieces (1mm thin)
6. Heat up the oil and shallots together until the shallots are golden brown at medium to high heat. Make sure to stir often. Once golden brown remove shallots
7. Heat up the Garlic at low heat . Make sure to stir again. Once golden brown remove garlic. Don't over cook the garlic as it will add a bitter taste to the oil.
8. Heat the oil to 375 degree Fahrenheit.
9. Pour the oil into the spice bowl and let it cool (about 30 mins). Once cool remove star anise
10. Mix in the fried shallots and garlic to the cool chili oil
11. Jar it. You can store it in the fridge for about 3 months.
