Raspberry Lemon Overnight Oats
Ingredients:
* 1/2 cup oats
* 1 tsp chia seeds
* 1/3 cup almond milk
* 1 tbsp sugar-free maple syrup
* 2 tbsp low-cal yogurt
* 1/2 cup raspberries
* 2 tbsp lemon juice
* 2 tsp cornstarch
* 1 tsp water
Instructions:
1. Oats: Mix oats, chia seeds, almond milk, syrup, and yogurt. Chill overnight.
2. Topping: Cook raspberries + lemon juice until soft.
3. Slurry: Mix cornstarch + water, then stir into raspberries to thicken.
4. Serve: Spoon topping over oats. Enjoy!
