Sorbitol is a sugar alcohol (hence its other name, glucitol) which is both sweet and great at hanging onto moisture. So, it's found in many places for many purposes. Nature uses it as an osmotic and component of some fruits to entice seed dispersal by animals. It's made in the body as an intermediate in the polyol pathway. Industry uses it's low-calorie sweetness and moisture-retention ability in food and drinks, as well as a texturizer for products like food (again) and cosmetics.
