Better than Pumpkin Pie? How to Make an Ancient Medlar Tart - Behind the Scenes at Mapperton Ep 19

I'm obsessed with medlars at the moment. They are an ancient fruit which fell out of fashion in the Victorian era, but we have a medlar tree beside the pergola at Mapperton Gardens. The fruit needs to be used once it has been 'bletted', a process of over-ripening the fruit in order to bring out the best of the flavor.

This medlar tart is fantastic! I'd go as far as saying it's better than the old festive favorite, pumpkin pie. Below is the recipe, if you can get your hands on some medlars:

To go in your shortcrust pastry base, you’ll need to mix:

- around 20 bletted medlars
- the juice of one orange
- 75g of thick, good honey
- 2 tablespoons of clotted or double cream
- an egg
- a squirt of vanilla paste
- half a teaspoon of mixed spice
