Old Fashioned Iced Oatmeal Cookies

From the warm and cozy flavor of the cookie to that classic vanilla icing, these Iced Oatmeal Cookies are like baking up a trip down memory lane.

If you’re like me, you remember reaching for that striped package of Iced Oatmeal Cookies anytime you visited your grandma’s house. Well, this recipe has all of those same homey, childhood vibes but we’ve elevated the flavor and texture to make them even better. You’ll see!

They’ve got a crunchy exterior with a slightly softer, chewier middle thanks to the oatmeal. The little bit of cinnamon adds a warm, spiced feel, and overall they just taste like coming home.

As if you’re not already sold on this recipe, both the cookie dough and the icing come together super quickly and easily and we have completely eleminated the whole oat blending step that people usually do for this type of cookie. Saves you some prep time and the results are to die for!

Start by getting your oven preheating to 350℉ and lining your baking pan with parchment paper or a silicon baking mat

Next, you’ll move on to the dry ingredients. Whisk flour, salt, cinnamon, and baking soda together in a small mixing bowl and set it aside for the time being.

Now is the time to pull out your stand mixer or a large bowl and handheld mixer. To whichever set up you’re using, you’ll add the melted and cooled butter, along with both sugars and mix it all together at medium-high speed for about 2 minutes. Then, you’ll add in your eggs and vanilla and mix until combined. 

Here’s where your Iced Oatmeal Cookies start coming together! Grab your bowl of dry ingredients and add it to the wet. Mix until combined, stopping to scrape down the sides of your bowl as needed. Next, add in the oats and mix once more, on low.

Drop by heaping tablespoon onto the prepared cookie sheet and bake for 10-12 minutes. Once done, transfer to a cooling rack and move on to the icing.

To make the icing, simply whisk together powdered sugar, milk, vanilla extract, and sea salt until smooth.

Once the cookies are completely cool, carefully dip the tops of them into the icing, letting the excess icing drip back into the bowl. Place them back on the cooling rack and allow about 20-30 minutes for the icing to set before serving them up.

For the Cookies:
1 cup all-purpose flour
½ teaspoon baking soda
¾ teaspoon fine sea salt
¼ teaspoon ground cinnamon
⅔ cup unsalted butter, melted and slightly cooled
½ cup light brown sugar, packed
½ cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract
2 cups old-fashioned oats
For the Icing:
1 ¼ cup powdered sugar
2 tablespoons whole milk
½ teaspoon pure vanilla extract
Pinch of fine sea salt

Make the Cookies:
Preheat the oven to 350°F and have ready a baking sheet lined with either parchment paper or a silicone baking mat.

In a small mixing bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside until ready to use.

Add the melted butter, light brown sugar, and granulated sugar to the bowl of a stand mixer fitted with a paddle attachment. If you don't have a stand mixer use a large mixing bowl and a handheld mixer. Mix on medium-high speed for about 2 minutes. Add the egg and vanilla extract and mix until evenly distributed.

Add the dry ingredients and mix on low to combine. Scrape down the sides of the bowl and mix once more. Add the oats and mix on low until evenly distributed.

Add a generous tablespoon of batter to the prepared baking sheet, spacing each cookie about 2" apart. Bake for 10-12 minutes. Remove from the oven and place on a cooling rack until the cookies have cooled completely.

Making the Icing:
Add powdered sugar, milk, vanilla extract, and sea salt to a small mixing bowl. Whisk to combine until smooth.

Gently dip the tops of the oatmeal cookies into the icing and yo-yo it up and back into the icing a few times, and allow the excess icing to drip back into the bowl.

Transfer back to the cooling rack and allow the icing to set, 20-30 minutes. Serve and enjoy!
