Suji ka halwa recipe!

Ingredients:
- 1 cup suji/semolina
- 1 cup sugar
- 2 cups water
- 1/2 cup ghee/clarified butter
- 1/4 cup chopped nuts (almonds, cashews, pistachios)
- 1/2 tsp cardamom powder
- A pinch of saffron (optional)

Instructions:

1. Heat a heavy-bottomed pan or kadhai over medium heat.
2. Add ghee and let it melt.
3. Add the chopped nuts and fry till golden brown.
4. Remove the nuts and keep them aside.
5. In the same pan, add the suji and sauté for about 5-6 minutes, stirring continuously, until it turns golden brown and releases a nutty aroma.
6. Meanwhile, in a separate pot, boil 2 cups of water and add the sugar to it. Stir until the sugar dissolves completely.
7. Now add the hot sugar syrup to the roasted suji and stir well until all the water is absorbed by the suji.
8. Add the fried nuts, cardamom powder, and saffron (if using), and mix well.
9. Cover the pan with a lid and simmer for 5-6 minutes until the suji is cooked and the halwa is thick and creamy.
10. Serve hot garnished with some more chopped nuts on top.

Your delicious suji ka halwa is ready! Enjoy it as a dessert or as a sweet accompaniment with puri or parathas.
