Imli ki Chutney Written Recipe With Directions:

Ingredients:

-Tamarind with seeds (Imli gutli k sath) 150 gram
-Water
-Cumin seeds (zeera) 1tsp
-Fennel seeds (Soonf) 1 tsp
-Black peppercorns (Kali mirch sabut) ½ tsp
-Cooking oil 1.5 tbs
-Asafoetida (hing) ¼ tsp
-Mustard seeds (rai dana) ¼ tsp
-Water half cup
-Brown sugar (Shakkar) 300g
-Sugar (Cheeni) 100 grams
-Red chilli (lal mirch) powder 1 tsp
-Ginger (sonth) powder ½ tsp
-Black salt (Kala Namak) ½ tsp
-Four seeds (Char Maghaz) 2 tbs

Directions:

-Soak the tamarind in warm water for 2 hours. Strain it. And get the pulp of it.
-In a pan, dry roast the cumin seeds, fennel seeds, and black peppercorns and crush them.
-Now, in another pan, heat the oil (you can use ghee as well), add asafoetida, and mustard seeds, roast it, then add water on low flame.
-Then add brown sugar (shakkar) and sugar. Mix well and cook it until it melts on medium flame.
-Now add tamarind pulp and cook it until bubbles lessen. Stir continuously on medium flame.
-Now add red chilli powder, ginger (sonth) powder, and black salt and cook on a medium flame for 3-4 minutes.
-Add the roasted spices (grounded) on low flame and cook until the water dries and the texture turns golden and shiny. Do not thick the mixture too much.
-Sprinkle with Four seeds (4 maghaz). Let it cool.
- Store in a clean & sterilized glass jar.
-Shift in a clean and sterilized glass jar with the help of a sieve. It can be stored in the refrigerator for 6-8 months.
-Can be used or served with Samosa, Chaat, Dahi Baray, and Spring rolls.

Tips and Tricks:

-While storing, use the glass jar, which is completely dried.
-You can also use jaggery (Gur) in place of brown sugar (shakkar).
-For smooth pulp, always use tamarind with seeds.
-Use of Hing is good for digestion.
