This BBQ sauce is a delicious sticky sweet aromatic sauce that goes perfectly with BBQ food and is especially good with pulled pork.
Amazing Aromatic Barbecue sauce
Aromatic BBQ Sauce – is great with chicken, pork ribs, burgers or pulled pork. This is a delicious addition to your BBQ repertoire and is really easy to make. The sauce combines an onion and tomato base with beautiful sweetness and depth in it’s core flavours. Coupled with a hint of aromatics this sauce is the perfect complement for any smoked or BBQ food.
Ingredients –
4 tins peeled plumb tomatoes (400g tins)
3 Large white onions (roughly chopped)
180g Granulated sugar
450g Soft Brown sugar or Muscovado Sugar
12g Salt
2 large Cloves garlic (roughly chopped)
4 tbsp. Vegetable oil
4 tbsp. Premium Teriyaki / soy sauce
2 tbsp. Worcestershire sauce
2 tbsp. Black treacle (heaped)
2 tbsp. Honey
2tbsp. Cider vinegar
1tbsp. Lemon juice
1tbsp. Paprika (sweet)
2tsp. Ground ginger
1tsp. Tabasco/Chilli sauce
1tsp. Ground white pepper
2 Star anise (finely ground)
4 Large cloves (finely ground)
Method
Add the oil to a large pan. Chop and sweat the onions until golden brown. Keep stirring so they don’t catch. This is an important flavour step and gives the finished sauce it’s real depth. Add the chopped garlic and stir until softened. Add the tomatoes and all the other ingredients.
Bring to the boil and reduce and simmer for two hours until the sauce has become thickened. Allow to cool and them blitz into a smooth sauce. To ensure a silky smooth sauce, pass through a fine sieve to remove any unwanted lumps.
To bottle, in glass jars, return the sauce to the heat and just before boiling point remove the sauce from the heat and bottle immediately into sterilised jars. Secure the lid and allow to cool. Refrigerate to increase shelf life once opened.
If bottling into a plastic squeezy bottle, ensure the sauce is cool beforehand.
