Zucchini Salad and Tomato Sandwiches Kind of Weekend

Had a fun weekend and got to enjoy the perfect summer meal. Zucchini salad and tomato sandwiches. I know everyone is looking for ways to use all the zucchini they are growing and I think this salad is something you will be very happy to add to your recipe book.

Zucchini Salad
1 slightly over sized zucchini, sliced and cut half, scoop seeds out.
you can cut ribbons or zoodle it if you would like
Herbs to taste (basil, oregano, lemon savory, parsley)
1/2 cup almonds crushed and toasted
olive oil dressing
parmesan cheese (as much as you like)
