Water level/fluid level capacitive sensor - How it works and how to make one

How it works and how to make a Capacitive Water or Fluid Level sensor for your fish tank, water collection, oil or fuel tanks, cutting oil in machine tools, hydroponic system, watering systems, and so on. If you think to use it for edible fluids (or anyway food-safe) or for fish tanks it is important to use proper non-toxic components (i.e. acrylic for the body and insulation).
In the video I explain the theory of operation of the electronic circuit that is used to gauge the capacitance of the sensor and to send the signal to a detector or a processor such as an Arduino or a ESP8266.
