Air Fryer Empanadas GLUTEN FREE, Vegetarian | Empanadas sin Gluten en Freidora de Aire
My absolute favorite empanada recipe. Stuff them with your favorite ground meat or use beyond meat crumbles along with me. My crust is also a buttery gluten free piece of heaven. Let's cook and workout together!
RECIPE:
**Dough**
1.5 Cup Gluten Free Flour (must have xantham gum)
1/4 Tsp Baking Powder
1/2 Tsp Salt
6 Tbsp Chilled, Cubed, Unsalted Butter
1/2 Cup Sour Cream
1 Tbsp Water if needed
**
Picadillo (Savory Filling)
**
1LB ground meat
1/2 Cup Chopped Onion
1/2 TSP Cumin
1/2 TSP Dry Oregano
1/4 Cup Raisins
1/2 TSP Apple Cider Vinegar
1/2 TBSP Smoked Paprika
1/4 Cup Chopped Olives
Salt and Pepper to taste
**Savory Sauce** (1 Serving)
1 TBSP Mayo
1/2 Tsp Siracha
1/4 Tsp Toasted Sesame Oil
1 Tsp Lime Juice
**Instructions**
In a large bowl combine the gluten free flour (with xanthum gum) add baking powder, salt, and mix to combine dry ingredients.
Add the chilled cubed butter and mix into flour by pressing each cube with your thumb and index finger until mixture starts to look like sand. At this point add the sour cream and water mixing by hand until mixture is somewhat combined. At this point the dough will still look kind of rough.
Make a ball with the dough and cover in plastic wrap placing it to chill for 30 minutes in the refrigerator.
After it has chilled use a floured rolling pin to roll out dough thinly and cut out circles using a bowl or large cookie cutter (around 6-8 inches in width)
**Filling the Empanada**
Place 1-2 TBSP of filling on one side of the empty empanada and fold over the other half making a semi-circle.
Crimp down the edges with a fork to keep the filling in. Beat 1 egg and brush the tops.
**Optional**
Fill them with your favorite jam or jelly and sprinkle with brown sugar to create sweet empanadas.
**Cooking Instructions**
Spray AIR FRYER basket with oil and place
empanadas inside. Cook at 300F for 5 minutes
and 400F for 8 Minutes. ENJOY!
