Open Faced Loaded Steak Baked Potato | CJ's First Cooking Show| Blackstone Griddles

CJ is joined again by @Michael Greenlee Blackstone Cooking to make something you might not think about when you think of a griddle. They are going to make you a baked potato!
Ingredients:

2 Russet potatoes

1 Filet Mignon or Ribeye

Bacon

Colby Jack Cheese (Shredded)

1 Yellow onion

1 jalapeno

Chives (garnish)

1/4 Cup Ketchup

1 tbsp Worcestershire

1 tbsp Soy

2 tbs Sriracha

Salt

Pepper

Garlic Powder

Unsalted Butter
Directions:
1.
Pre Heat your air fryer at medium, roughly 350 degrees. As well as one zone
of your griddle top to Medium.

Slice your two potatoes in half length wise and place each half on a sheet of
aluminum foil. On each potato half add a touch of olive oil, salt, pepper,
garlic powder, and wrap up with the foil. Place two halves in each air fryer
basket and cook for roughly 20-25 minutes or until cooked through out.
You’ll know they’re done when they are soft inside.

While your potatoes are cooking add 4 strips of thick cut bacon to your
griddle top. Flip and cook to desired crispiness. For this recipe you’ll be
cutting up your bacon so it helps if they’re crispy.

While your bacon is cooking lets season our steak. On a plate or cutting
board pat dry on both sides with a paper towel and lightly coat with olive oil
as well as seasoning generously with salt and pepper. Be sure to season
both sides.

Your bacon should be close to being done, so slide your bacon over a little
to make room to cook your steak in the bacon fat. Depending on how thick
your steak is and what temperature you want your steak cooked to depends
on how long you should cook the steak. Flip when you have a nice crispy
sear and cook till done. I like a medium temperature steak so this won’t take
more that 8-10 mins with a thick cut

let. When it’s cooked to your preferred
temp remove from the griddle and allow to rest for 5 minutes and then slice
thin for plating.

While your steak cooks you can cut up your yellow onion and add that to the
bacon fat next to your steak to cook. Toss occasionally and cook till
caramelized with crispy edges. Then remove from griddle or set aside on the
griddle top.

Once your bacon is done, remove from the griddle to drain on a paper towel
and chop into small pieces. You can also slice up your jalapeño and chop up
your chives for garnish.

Now we’re going to make our steak and potato sauce. In a mixing bowl add
1/4 cup of Ketchup, 1 tbsp Worcestershire, 1 tbsp Soy suace, 2 tbsp
Sriracha and 1 tsp of Garlic Powder, mix well and set aside.

At this point your potatoes should be all done. Remove them from the air
fryer, turn o

your air fryer and unwrap from the foil.
10.
To plate, place one or two halves of your potato on the plate and break up
the potato gently with a fork. Now you’re not cutting the potato up, you’re
opening it up a bit more to spread it out. While it’s still hot season with salt, pepper, and garlic powder. Then add a hand full of shredded Colby jack cheese over the potato, top that with the caramelized onions, add some of your sliced steak on top of the cheese, sprinkle your chopped bacon bits on that, place a few slices of jalapeños, some chopped chives and drizzle with the steak sauce. I like to have a small side of the sauce on my plate as wellfor a dipper. Enjoy!
