Tricia's Creations Charro Beans
Here is my recipe for Charro Beans, easy to make it just takes some time. This can be done in slow cooker if you prefer, just put on low for approx 6 hrs.

Charro Beans
Ingredients:
2 lbs dry pinto beans (uncooked)
1 pk bacon ( your choice)
1 medium onion chopped
3 small tomatoes chopped
1 large jalapeno chopped
4 cloves garlic chopped
1 bunch cilantro chopped
salt, pepper, and cumin to taste
Instructions:
First sort out the beans making sure to remove any halves or broken bits of beans and any rocks or residue. Rinse the beans in a colander at least 3 times to make sure they are clean. In a large pot add 6 cups of water and add beans. Salt the beans with about 2 tsp of salt and turn heat on to high. Bring to a boil. As soon as it boils add chopped bacon and allow this to boil for about 20 minutes as you watch over it. Add water as needed always keeping level of water above the beans. At 20 or 30 minutes you will drop the heat to a low heat. On a scale of 1 to 10..keep the heat at about 3.. this is not a simmer but a low to med heat. You may keep at a simmer but it will take longer to cook beans. Once you have at lower temp cover your beans and check them every 20 to 30 minutes to check water level and stir them around. You will do this for 2 hrs of the total 3 hrs cooking time or rather after first 30 minutes..cook for 1 1/2 hrs. Add the chopped garlic, onions, tomatoe, and jalapeno at the last hour mark. Add pepper and cumin to taste. Stir it in well and add water if needed. Cover and cook 30 minutes more.. keep eye on it! For the last 30 minutes add the cilantro, stir it in and give the broth a taste. The beans should be tender and mashable between your fingers. Add salt, pepper, and or cumin if needed to taste. Finish cooking last 30 minutes. The beans and veggies should all be tender and the water should look thickened and color of beans. Your Charro beans are now ready to enjoy!
