No-Bake Energy Bites | Quick, Healthy, Vegan & Gluten Free | Energy Balls Recipe

These no-bake Coconut Almond Energy Bites are the perfect healthy snack—nutty, naturally sweet, and packed with wholesome goodness. With just a few simple ingredients, you can whip them up in minutes. No baking, no fuss—just mix, roll, and enjoy!

Ingredients:
1 cup desiccated coconut (plus extra for coating)
¾ cup almond flour
¼ cup pure maple syrup or honey
¼ teaspoon vanilla extract or essence

Instructions:
Make Almond Flour :
Add raw almonds to a blender or food processor and pulse until you get a flour. It doesn’t have to be super fine—a bit of texture is okay.

Prepare the Mixture:
In a medium bowl, combine: desiccated coconut, almond flour, maple syrup or honey and vanilla extract.
Mix everything together with a spoon until well combined and the mixture holds together.

Shape into Bites:
Take small portions of the mixture and roll into bite-sized balls. Coat each ball with extra desiccated coconut for added texture and flavor.

Serve or Store:
Enjoy immediately or refrigerate in an airtight container for up to a week.
