Barbados Independence Day - How to make Bajan Conkies

Conkies are a delicacy enjoyed by every Barbadian, primarily during the month of November each year. Conkies are a corn-based dish, also referred to as a stew dumpling, steamed and often wrapped in banana leaves. Once Barbados gained its independence on November 30, 1966, this dish which was previously used to recognise Guy Fawkes day earlier in the month gradually became part of the Barbadian independence tradition.
