Real Gefilte Fish

Gefilte fish is a classic Jewish stuffed fish dish. Often called "Fish Balls" in America. Originally made by Jews from Europe from inexpensive white fish like carp or cod or hake. It is a festive dish typically prepared for the the Shabbat and Passover Seder meals. This is a step by step tutorial from buying the fish to the final presentation.
Ingredients:
Two whole fish about 4 pounds each. Carp is best.
One fish is cleaned through the head and sliced into 1 inch thick slices/rings
The other fish is filleted and minced. Save the bones for the fish broth.
1 large onion chopped
2 large carrots peeled and cut into 1/4 inch slices
2 tbsp. vegetable oil
2 tbsp. salt
2 tsp. pepper
6 tbsp. sugar
2 fresh eggs
1 hard boiled egg
1/4 cup matzo meal
3/4 cup breadcrumbs
