Ingredients:
For Rice Pulao:
Rice - 500 gm
Soya chunks - 100 gm
Green peas - 100 gm
Potato - 100 gm
Carrot - 100 gm
Onion - 200 gm
Tomato - 200 gm
Green chili - 3 pieces
Ginger paste - 1½ tsp
Garlic paste - 1½ tsp
Salt - 2½ tsp
Chili powder - 3 tsp
Coriander powder - 1 tsp
Turmeric powder - ¼ tsp
Lemon juice - 1 lemon
Oil - 2 tsp (for frying)
Water - 750 ml
Whole Garam Masala:
Bay leaf - 3
Cinnamon stick - 2 inches
Cloves - 2-3
Black cardamom - 1
Black pepper - 7 pieces
Cumin - 1 tsp
For Boondi Raita:
Buttermilk - 1 liter
Boondi - 100 gm
Red chili powder - ½ tsp
Salt - ½ tsp
For Stadka (Tadka):
Oil - 1 tsp
Cumin - ½ tsp
Dry red chili - 1 piece
1. For Rice Pulao:
Wash and soak rice for 20 minutes.
Fry the soya chunks and vegetables (potato, carrot, peas) lightly in 2 tsp oil.
Add onions, tomatoes, green chili, ginger-garlic paste, and spices (chili, coriander, turmeric powder).
Add water, whole garam masala, and salt. Bring it to a boil.
Add soaked rice and cook on low heat until the rice is fluffy and aromatic.
2. For Boondi Raita:
Mix buttermilk with salt and red chili powder.
Add boondi and stir well.
Prepare the tadka: Heat oil, add cumin and dry red chili, and pour over the raita.
