Creamy Barley & Mushroom Soup | Simple & Delicious #SoupRecipe #BarleySoup #HomeCooked

Ingredients:

1 cup pearled barley, washed and soaked overnight
2 medium carrots, grated
200 g mushrooms, sliced
1 liter chicken broth
1 liter milk
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)

Wash and soak the barley overnight. The next day, rinse it thoroughly and cook it in a large pot with 1 liter of chicken broth until fully tender. While the barley cooks, grate the carrots and rinse them well. Slice the mushrooms. Once the barley is cooked, add the grated carrots, sliced mushrooms, and milk to the pot. Leave the lid open and let the soup simmer gently until the vegetables are tender and the consistency is to your liking. Season with salt and pepper. Serve hot, garnished with freshly chopped parsley.
